Organic Cracked Rye Berries by Food to Live is made by cracking raw whole rye grains into medium granules. While this process reduces cooking time, it also allows to preserve the full nutritional value of the grain's bran and germ layers. Organic Cracked Rye Berries are incredibly rich in iron, a mineral that our bodies use to produce hemoglobin (a special protein within our red blood cells that is responsible for delivering oxygen to all parts of the body). Moreover, our Cracked Rye Grains aka Rye Chops are rich in Dietary Fiber and Protein, both of which are necessary for any proper diet plan. Food to Live's Cracked Rye Berries are Organic, Non-GMO, Kosher and Vegan. They're 100% raw!

Use Crushed and Sifted Rye Groats in hot and cold cereal, sweet and savory porridge, salads, grain bowls, many middle-eastern dishes, soups, and of course a variety of delicious breads, including sourdough and the infamous Scandinavian Rye Bread (see recipe below).

Cooking Instructions: * For each cup of Organic Cracked Rye Berries use three-four cups of water (1:3-4). If cooking on a stovetop, combine water and cracked rye in a pot and bring to a boil. Add 1/2 tsp of salt. Reduce heat, cover and simmer until tender for about 30-35 mins. After about 20 mins, stir every 5 min, and if the water is fully absorbed, add more (1/4 cup at a time). Fluff with a fork before serving.

Ingredients for Sourdough and Soaker: 1 cup cracked rye berries, 1 tbsp mature rye sourdough starter, 1 cup dark rye flour, 1/3 cup pumpkin or sunflower seeds.

Ingredients for Bread: 1 cup + 1 tbsp dark rye flour, 2 tsp sea salt, 1/4 tsp instant yeast, 2 tsp malt syrup, vegetable oil.

How to Prepare Danish Rye Bread: Prep time: 24 hours | Serving size: 1 loaf INSTRUCTION: Into a bowl, mix cracked rye berries, 3/4 cup cold water and seeds. Cover bowl with plastic wrap or cloth and let soak for 24 at room temp. In a different bowl mix sourdough starter and 1/3 water. Add rye flour and mix until complete absorption. Cover bowl with plastic wrap and leet proof for 24 hours at room temp. In a medium bowl, combine soaked grains and 1/2 cup of sourdough starter, add rye flour, 1/4 cup + 3tbsp water, salt, yeast, and malt syrup. With your hands, mix ingredients until fully combined. Note that your dough will be very sticky. With oil, grease a 9x4in loaf pan. Add dough, and with a spatula, flatten it evenly. Place in warm place to rise about 3/4in and gain 30% volume (3 hrs). Preheat oven to 360F (175C) 30 mins before baking bread. Place loaf into oven and bake for around 80 mins. Thermometer inserted into center should show 210F (98C). Remove loaf from pan and place onto a rack to cool. Allow to cool overnight. Store in a paper bag for up to a week. If freezing, put in a plastic bag and store for 2 months. Serve sliced with favorite toppings.
